We have collaborated with Palm Heights, the luxury boutique hotel situated on Seven Miles Beach in Grand Cayman, on the creation of four different cocktail menus and full training of their bar staff. Every list we have designed, while being different from one another, is inspired by the Caribbean and by Palm Heights love for wellbeing. We worked with local island producers in order to get the best and freshest ingredients for our drinks.
Cocktail lists include Coconut Bar, Tillie's, Paradise Pizza and Bar Bambi.
Currently working with GuestHouse hotels, the independent hospitality group based in the UK.
For the opening of their Margate site we created two signature menus, Rooftop and Pearly Cow, to match the culture and the style of the property, using local Kent ingredients and UK-based spirits producers for our lists.
We are working with them on their exciting new openings.
Following our travels to Latin America, we have partner up with The Thesleff Group and re-launched Viajante87, with our concept: a Latin American inspired cocktail bar in the heart of Notting Hill.
We worked on a brand new cocktail menu - featuring unusual ingredients that we have brought with us from overseas - trained the team, and are currently running all operations, leading brand management and communication.
Viajante87 entered the World's 50 Best Bar in their extended list in October 2024 and has been awarded a PIN of Excellence by The Pinnacle Guide.
We traveled Latin America for five months looking for what makes a World Class Bar. During this time, we spent weeks with some of the best teams in the region, working with them on the creation of a menus based only on produce we could find in local market.
At each bar we hosted a Masterclass focused on building a world class team in the changed landscape of the hospitality industry, and how to navigate the new generation of employee's expectations.
